Aromas of vibrant tropical fruits, and french vanilla. Adventurous flavors of baked apple, asian pear, shortbread and lemon zest.
Vineyard Notes
The Hillside Reserve Vineyard sits atop an ancient sea mount of Monterey Shale limestone and thin top soils. Ocean views from the top of the vineyard illustrate why cool foggy nights compliment the native soil to produce well structured wine grapes. Dry farmed original vines, undisturbed for 30 years, have deep root structure, thin canopies, and resilient vine stock.
Winemaker Notes
All native yeast primary and secondary fermentation. Batonnage lees to enhance biscuit flavors.
